Spiced Apple Pumpkin Muffins

What you’ll need:

  • 2 jars (4.25 oz each) Beech-Nut Naturals apple, pumpkin & cinnamon
  • 1 cup firmly packed brown sugar
  • 1/2 cup vegetable oil
  • 1/3 cup milk
  • 2 eggs
  • 2 1/4 cups all-purpose flour
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 large Granny Smith apple, peeled and chopped
  • 1/2 cup chopped pecans or walnuts

Prep Time: 20 minutes | Cook Time: 25 minutes | Servings: 12 servings

Directions:

Preheat oven to 350°F. Line 12-cup muffin pan with large paper liners. In large bowl, whisk together sugar, Beech-Nut Naturals apple, pumpkin & cinnamon, oil, milk and eggs until smooth. In a separate bowl, stir together flour, cinnamon, ginger, baking soda, salt, baking powder,cloves and nutmeg until well combined.

Stir flour mixture into Beech-Nut Naturals apple, pumpkin & cinnamon mixture, just until no streaks remain; fold in apples. Divide evenly among prepared muffin cups. Smooth tops and sprinkle with pecans.

Bake for 25 minutes or until tester inserted into center of muffins comes out clean; transfer to wire rack. Let cool completely.

Tip: Substitute another superfood for the Beech-Nut Naturals apple, pumpkin & cinnamon and sprinkle the tops with flax seeds before baking if desired.
