Tutti Fruity Pancakes

This easy breakfast recipe for your toddlers and older children comes from our partner Eileen Thomas, RDN, CSP, LD. She’s a Registered Dietitian Nutritionist and is Board Certified as a Specialist in Pediatric Nutrition. She put together this recipe as an easy (and healthy!) way to add fruits and iron into a common breakfast treat for the whole family.

 

Tutti Fruity Pancakes

Beech-Nut® Infant Cereal provides a healthy dose of iron (45% of a baby’s daily value) and other vitamins and minerals to these fluffy pancakes. No need for syrup. These pancakes are naturally sweetened with Beech-Nut® fruit puree. Top with diced fresh fruit and extra fruit puree for a deliciously nutritious breakfast you and your little ones will love!

What You Need

Serves 6-8

  • 1 ¾ cup dry pancake mix
  • ¼ cup Beech-Nut® Oatmeal Infant Cereal
  • 1 jar (4 oz) Beech-Nut® fruit puree (banana or other fruit variety of your choice)
  • 2 eggs
  • 1 ¼ cup milk

Directions

  • Heat skillet over medium high heat.
  • In a medium sized bowl, combine all ingredients.  Use a fork to stir until just blended (batter will be lumpy).
  • Spray cooking surface with nonstick cooking spray. Pour ¼ cup batter onto hot skillet for each pancake.  Cook about 1 ½ minutes per side or until golden brown. Repeat with remaining batter. Serve immediately. Top with diced fresh fruit and fruit puree if desired.
